A Spring Evening with Can Pep Rey

Thank you to all of those who joined us for dinner last week, welcoming the Spring season in Barcelona. We were privileged to have our talented designer, Lea Russ cook for us and welcome us all into her kitchen for the evening. Talisman Wines provided a fruitful selection of natural wines that our guests enjoyed throughout the evening. Rafael Ulecia’s performance filled the room with emotion and set the mood for a very special evening. We are looking forward to our Summer season dinner. To commemorate the night we have shared Lea’s butter recipe, our playlist and a selection of photos from the evening. 

Lea's Homemade Herb Butter:
250g
 
500ml of Cream
1 handful of fresh parsley
1 handful of fresh dill
Pinch of salt
Pinch of pepper
 
Whisk the cream until the liquid separates from the solid texture
Give it 2-3 minutes 
Continue whisking preferably with a magic mixer and not by hand.
 Poor the cream through a cotton kitchen towel or cheesecloth and squeeze all the liquid out.
Now you have fresh butter left in your towel.
Mix in the chopped herbs, salt and pepper.
Leave your butter to cool in the fridge. Remove it 1hr before eating.
Dip into a crunchy radish or a fresh piece of bread.
